Indonesian Fried Noodles

The same delicious noodle meal my mother used to make for me when growing up is what she used. It is most definitely comfort food. Including your preferred meats and vegetables will change it.

Ingredients
1 250g pkt dried wheat noodles
2 tbsp peanut oil
2 eggs, at room temperature, lightly whisked
1 carrot, peeled, diced
200g pork fillet, very thinly sliced
8 green shallots, trimmed, thinly sliced diagonally
1 red capsicum, deseded, diced
2 garlic cloves, crushed
3.5cm piece fresh ginger, peeled, finely grated
380g small cooked prawns, peeled, chopped
2 tbsp kecap manis
1 tbsp sambal oelek
70g bean sprouts
Pinch of salt

How it’s Made :

Step 1 :

Put noodles in a heatproof bowl. Cover with lots of boiling water and leave aside, stirring again and again to separate, for five minutes or until soft.

Step 2 :

Heat two tablespoons of oil in a wok over medium-high heat. Add eggs, working tilting such that they coat sides and base. Lift edges raw egg runs under as omelette starts to solidify. Cook for one minute or till set. Lay on a chopping board and roll into a log. Cut crossways thinly with a sharp knife. Arrange on a dish and save till needed.

Step 3 :

To the wok, add still another 2 teaspoons of the oil and raise the heat to high. Add the meat; stir-fry for two minutes or until browned. Spoon into a basin; leave aside until needed.

Step 4 :

Heat the remaining oil in the wok. Add the carrot, capsicum, half of the shallots, garlic and ginger, and stir-fry for 1 minute.

Step 5 :

After draining the noodles, toss the pork, prawns, kecap manis and sambal oelek into the skillet and stir-fry for two minutes or until the noodles are hot through.

Spread among serving dishes, top with sliced egg and remaining green shallots. Serve right away.
