Ingredients

  • 2 cups all-purpose flour

  • 1 teaspoon baking soda

  • ¼ teaspoon salt

  • ¾ cup brown sugar

  • ½ cup butter

  • 2 large eggs, beaten

  • 2 ⅓ cups mashed overripe bananas

Directions

  • Set the oven temperature to 350°F (175°C) and grease a 9×5-inch loaf pan lightly.
  • In a large bowl, mix together the flour, baking soda, and salt. In a separate large bowl, cream the brown sugar and butter with an electric mixer until smooth. Add the eggs and mashed bananas, stirring until well combined. Gently fold the banana mixture into the flour mixture until just incorporated. Transfer the batter into the greased loaf pan.
  • Bake in the preheated oven for about 60 minutes, or until a toothpick inserted into the center comes out clean. Allow the bread to cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely.
